Black Bean Salad

You can make this simple salad at home or at the campsite. Bean salads are a great way to get some veggies on the road without worrying about wilting greens!
1/4 cup olive oil
1 can of black beans, drained and rinsed
1 can of whole kernal corn, drained
1 zucchini, chopped into bite size pieces
1 large tomato, chopped
1 jalepeno chopped (optional)
Salt and pepper to taste
Note: Chopped avocado and cilantro are also great addition to the salad, but not easiest ingredients to travel with so they were not included in this recipe.
1. In a bowl, whisk together olive oil and juice from both limes.
2. Add black beans, corn, zucchini, tomato and jalepeno.
3. Carefully toss so that lime and olive oil dressing are incorporated throughout salad.
4. Add salt and pepper to taste.
