Favorite Creamy Pasta Salad

Pasta salad- add chickpeas for a veggie option or chicken/tuna if you eat meat.

A quick and hearty pasta salad is great fuel on a camping trip. This recipe is vegetarian, but you could take canned chicken or tuna and add for extra protein.

INGREDIENTS

1 package (12 ounces) tricolor rotini pasta
1/2 English cucumber, chopped
1/2 red onion chopped
1 pint of cherry or grape tomatoes
1 cup pitted kalamata olives
1 bottle (8 oz) of ranch dressing
Optional: Can tuna/chicken/chickpeas and feta cheese

DIRECTIONS

At home:

1.Cook pasta according to package instructions, but cook only to al dente.
2.Chopped red onions, olives, English cucumbers and half tomatoes.
3. Pack pasta in one container and veggies in second container.

At campsite:

1.Combine pasta and veggies in a bowl.
2.If adding meat, make sure it is well drained. (Remember so drain in separate container and pack out juices).
3.Stir in ranch dressing and add cheese.
